{INSPIRATION} Hamburger Steak with Caramelized onions served with Golden Mashed potatoes and Green Peas
This isn't exactly the meal I thought I'd be craving during a heatwave! However, sweating in front of a barbecue in 35 degree weather was not quite my idea of a fun dinner either! Thank goodness for A/C for keeping the house cool enough to make this meal comfy and cozy!
The star of this show are the mashed potatoes! If you don't know me personally, you won't know that I am legit a potato whore. I love potatoes in pretty much any way. I particularly like yellow-fleshed potatoes for their golden colour, sweetness and smooth texture. I always add sliced onions to my potatoes when they boil for a really nice flavour. Make sure you slice the onions along the equator (east to west, NOT north to south) as this will allow them to disintegrate right into the mash! If you want them to stand out, cut north to south so they keep their shape.
Golden Mashed Potatoes:
6-8 medium yellow-fleshed potatoes, peeled and halved
1 small onion, halved and sliced along the equator
Milk
Butter
salt or seasoned salt
Place potatoes and sliced onions into a large stockpot with plenty of water. Salt the water liberally and bring to a boil. Turn down to med-high simmer, and cook till potatoes are tender. Drain, making sure not to lose too many onions. A bit of liquid left is ok. Add butter, couple of splashes of milk and mash. Continue adding and mashing till you get the right consistency. I wish I could tell you how much you'll need, but mashed potatoes are best made optically! Season with salt, or seasoned salt.
The other components of this dish are pretty standard fare to me. Everyone has their favourite way of mixing their hamburger meat. I think you should make it the way YOU want. I personally keep my patties basic, so that not too many flavour profiles are fighting for attention. The caramelized onions needs some time to shine too!
Vegetable sides are also whatever you like! I tend to lean towards corn or green peas for this dish because I like using the mashed potatoes as glue to pick up the little kernels!
While we aren't looking at a gourmet meal here, it's just such a classic dish, and deserves a redo/updo from time to time!
